Okay…so…this is so unbelievably, irresistibly, orgasmically D E L I C I O U S that I literally made it twice in two days and each time, totally failed to snap a pic before devouring it like the true G O U R M A N D E that I am. Third time’s a charm though, so you’re in luck…finally, I can share the secrets of this maddeningly decadent R A W  B R O W N I E with you! But, before you dare…consider yourself warned…this WILL become an addiction…so start thinking brownies for dinner and an extra hour of yoga per day!
Brownie
½ measure pitted dates (not soaked)
½ measure raw cashews
¼ measure raw organic cacao
Pinch of Himalayan Sea Salt
Frosting
2 tsp organic cold-pressed coconut oil
1 tbsp maple syrup
2 tbsp raw organic cacao
Mix brownie ingredients in a food processor, processing cashews until finely ground, then adding the rest, mixing until it starts to stick together. Press the mix firmly into individually sized silicon molds. Refrigerate until it holds its shape (approx. 2hrs). Frost generously using the smooth and creamy mix of three simple ingredients, top with your favorite seasonal fruit, indulge immediately and experience the mind-blowing effects of this super simple, totally scrumptious chocolatey goodness! Never again will you consider eating a conventional brownie…ever.
PS: Gotta say…the pic was actually well worth the wait, as I happened (on day 3 of my addiction) to score that fabulously flourescent purple dragon fruit and a succulent mango to top it all off…A M A Z I N G combo both visually and for the tastebuds!

Banana Chocolate Coconut Smoothie

According to my five-year-old, “The best smoothie in the history of the world!”
You be the judge! Careful though…it’s super addictive!

6 very ripe bananas
1 tablespoon of raw cacao
Water from 1-2 fresh young coconuts
1 teaspoon coconut flower sugar
Handful of ice

Blend until smooth and ENJOY!

Sooooooo yummy…

Plenty of romaine lettuce leaves
Lots of cherry tomatoes
1 sliced avocado (salt, pepper, squirt of fresh lemon juice)
Diced cucumber marinated in avocado dressing (1 small avocado blended with salt, pepper, fresh Thai chili from the garden, diced red onion, pinch of cumin, chives)
Cashew cheese (large handful of raw cashes blended with tiny bit of water, salt, pepper, pinch of cumin)

Build them your style, eat with you hands, get messy & ENJOY! Bon appétit!

IMG_2307So, it’s been a really long time since I blogged about food… To be perfectly honest, that’s because, sadly, I’ve been in a bit of a nutritional rut. Happens to the best of us, right? …busy lives, little time for cooking (or rawing, in this case) and a serious lull in gastronomical creativity. That being said, I have recently been majorly inspired by some awesome vegans and fruitarians whose radiant health and contagious enthusiasm could quite possibly motivate the entire planet to go raw!

LASAGNA WITH CASHEW CHEESE & BROCCOLI SUN-DRIED TOMATO PESTO

Lasagna noodles:
1 zucchini

Cashew cheese:
2/3 cup cashews
2 peeled garlic cloves
1 tablespoon fresh lemon juice
1-2 teaspoons dried rosemary
2-3 tablespoons nutritional yeast (optional)
Salt and pepper, to taste
Water, as needed

Pesto:
1/2 head of broccoli
2 tablespoons sun dried tomatoes
1 tablespoon olive oil (only if your sun-dried tomatoes aren’t already stored in oil)
Salt, pepper and dried herbs, to taste
Water, as needed

Other layerings:
Mushrooms
Tomatoes
Spinach leaves
Sprouts

To make the noodles: slice the zucchini on a mandolin. Or very thinly with a sharp knife. Set aside.
To make the cheese: blend all ingredients in your food processor or blender until smooth and thick, adding as little water as possible. Set aside.
To make the pesto: blend all ingredients in your food processor or blender until smooth and thick, adding as little water as possible.
Assembly: layer the noodles with the pesto, cheese and whatever you else you like, alternating as you go. If you want, make roll ups too! Enjoy.
